Hello, my name is PhiIlip Strasser. I created this sauce/dressing as far back as 1995 in our take away salad bar in Martin Place Sydney. At the time I had a strong sense that our customers were yearning for a product that would inject lots of character and flavour into our salads where the ingredients were a little bland. Sweetness and spiciness in a sauce or dressing are definitely two characteristics that draw out the flavour in ingredients, or otherwise it puts flavour in. Hence I created the Moroccan sesame dressing with sweet and spice.

In a very short space of time, the dressing proved to be so popular that we took the next step by ordering commercial food bottles with lids and immediately bottled the product. That way our customers were free to use the dressing in the comfort of their own home at their own leisure.

The dressing has a very distinct flavour. The teriyaki adds body while the chilli is there to "warm" the mouth rather than to "burn" it. Having said that, the spicy dressing is more chilli concentrated (than the mildly spicy one) because I am fully aware that some customers love incredibly hot food! It is interesting how varied peoples' tastes are! Hence I have created two versions of this dressing - one mildly spicy and the other as very spicy. The end result is that you, the customer, have available to you, an extremely fine product. I know that because I make it and I have made it for many years.

There is an important statement that I must emphasise. I personally make this dressing. I use digital scales when weighing all the ingredients to ensure as much accuracy and consistency as possible. My usage of digital scales is my method of exercising quality control.

With this dressing, I poured in all my chef experience, all my experience from my takeaway salad bars, together with what I learnt at Ryde College of TAFE. That is why I am so dedicated and I care so much and take all the responsibility for this dressing. That is why I can comfortably and confidently say that this is a delicious dressing that will do enormous justice and add loads of character to your salad.
